Taiwanese are fiercely proud of their cuisine and many Kaohsiung restaurants claim to surpass those of Taipei. Local cuisine takes inspiration from that of nearby Fujian, generally mild and sweet, with an enticing variety of soups and fresh seafood. Ever tried a Chinese hamburger? Stewed pork meat is stuffed in a steamed bun, glazed with sour pickles and dusted with powdered sugar. At any night market, look for a guy with a cart pulling hot steamed buns from under a white cloth, and watch how quickly the line forms.
